SECURITY STUDIES CANNED RED CAVIAR

For Ukraine is acute problem of quality and safety of products. Statistics show that more than 4 thousand. Ukrainian annually die from poisoning substandard and dangerous products. How many people suffer from poisoning, static does not answer. Especially the quality and safety of topical during the many festivals where people buy so-called "delicacies", including many families and corporate chief is caviar, beautiful, red, and the family had been obtained, the holidays consume eggs mintaya. The state of health of Ukraine's population depends on the quality of products that do not meet international safety standards. The analysis conducted on the basis of the Centre of Expertise "Test" (Table 1) showed that the contents of the jar with 4 stamps of red caviar was dangerous for the following reasons. The contents of all brands tested had a high content of preservatives; salt, sodium benzoate, E211, E 200 sorbic acid salt as a preservative known and widespread even studied and is not considered as a preservative. It is known that one of the points of preservatives even permissible doses <1000 mg / kg is used in excessive harmful effects. The combination of salt and sodium benzoate, sorbic acid or even permissible concentrations nobody out, that does not mean that the combination is safe for human health. Based on the data center expert "Test" to the following conclusions: -dodavannya preservatives in a jar of caviar not always ensure microbiological safety. -high price of the product does not ensure the safety of its use in connection with a combination of two or more dangerous preservatives. -in our view 4 stamps of red caviar is a serious danger to public health
